A whole lobster looks like a puzzle the first time. It is not. Work in order, use your hands, and accept that it gets messy. Here is the simple path from claws to tail, plus the part most people miss.
Twist off the claws and knuckles first and crack them. Then take the tail, push the meat out from the flipper end, and pull away the dark vein. Finish with the little legs. The tail has the most meat, but the knuckles are the sweetest, so do not skip them.
Step by step
- 1. Twist off the claws. Bend each big claw back until it pops free. Crack the shell with a cracker, or the back of a chef's knife, and pull out the meat in one piece.
- 2. Do the knuckles. The short segments between the claw and the body hold the sweetest meat. Snap them, then push the meat out with a fork or a lobster pick. This is the part beginners walk right past.
- 3. Take the tail. Twist the tail off the body. Push the meat out from the small flipper end, or split the shell along the underside. Lift out the meat and pull away the dark vein.
- 4. Mop up the legs. Bite or squeeze each small leg from one end to push the slender thread of meat out. Tedious, but sweet.
- 5. The body. Inside you may find the green tomalley (the liver) and, in a female, red roe. Both are edible. Many people enjoy the tomalley, in moderation.
What to skip
Leave the hard shell, the small grit-filled sac just behind the eyes, and the feathery gills along the body. Everything else is fair game.
No cracker? No problem
The back of a heavy knife, a sturdy nutcracker, or even the hinge of kitchen shears will crack a claw. In a pinch, press the claw against the edge of the table and lean. The goal is a clean crack, not a shower of shell.
